Instructions
  1. Prepare cookies as in recipe, roll one tablespoon of dough in to ball and place on silpat or parchment paper covered baking sheets, flattening slightly.
  2. Bake cookies, 8-10 minutes, just until the edges turn golden and the bottoms are lightly golden.
  3. Place pan on cooling rack for five minutes and then remove cookies from pan to cool.
  4. Assemble sandwiches by placing desired amount of ice cream in between two cookies and lightly pressing together. Serve immediately if desired or wrap in plastic wrap and freeze.
  5. Freeze 6 hours or overnight. Once frozen, place wrapped sandwiches in a freezer bag to store until needed.
