Guacamole made with fresh avocados, tomatoes and cilantro are absolutely spectacular. It takes just a few minutes to put together this recipe which is so worth the effort. I always have to chuckle when I make this dish, people are absolutely fascinated with the whole process. I slow it down a little and make a little show out of it.
Serve with corn tortillas or with our taco salad, grilled fish tacos or our chicken enchilada casserole.
In a medium bowl add olive oil, 2 tablespoons of red onion and 2 tablespoons of cilantro and muddle
Add the avocados and onion; using two spoons crisscross together gently to mash the avocados
Add the tomatoes, cilantro, lemon juice and salt - stir together gently to incorporate ingredients
We recommend letting the guacamole chill for 1 hour before serving
Serve with tortilla chips and enjoy!
* You can use any kind of hot pepper you like or omit entirely, this should be done to your preference.
