Peeling Tomatoes
Use ripe tomatoes when you want to skin them. Tomatoes that are not ripe are really hard to peel. For reference, 4-5 Roma tomatoes is equal to about one pound.

  1. Wash and core all tomatoes
  2. Cut a small X in the bottom of each tomato
  3. Fill a pan with water and bring to a boil. Lower heat so water is hot, but not a rolling boil
  4. Fill a bucket or sink with cold water and add ice. You want ice cold water for the tomatoes to stop the cooking process
  5. Put tomatoes in hot water and watch closely. It takes about a minute for the skin to start peeling from the tomatoes
  6. When the skin starts to peel use a slotted spoon to take the tomatoes out of the hot water and plunge them into your ice water bath
  7. Allow the tomatoes to cool for about one minute (you want to stop the cooking process) and then using a slotted spoon remove remove from ice bath. The skin should slip right off the tomato
Recipe Notes

I peeled 6 pounds of tomatoes to use in a fresh, simple tomato sauce base.  It took me 20 minutes from start to finish to do all 6 lbs.  You can use this method to skin any kind of tomato so long as they are ripe.
