The first thing you need to do is breathe. You are absolutely allowed to grieve for the loss of foods that have been associated with comfort, for probably your entire life.
I do not however, recommend that you stay in this place for long. I see more gluten free sites and groups where people spend exorbitant amounts of time commiserating over what they miss, whining over what they can not have or daydreaming about what they would eat if they could. I strongly recommend that you do not fall prey to this type of behavior.
NOW, it is time to get up and leave that pity party behind. Go into your kitchen and (using our “Sharing Your Kitchen” section) get busy. There is real work to be done here. Getting in to the kitchen and incorporating these suggestions really helped me start to embrace my new life.
Being gluten free is not the cardboard food hell that it used to be; we have some really great options out there. There has been real innovation in the food industry to help improve the food those who have food allergies and improving our lives as a result. It is time to embrace the gluten free life and all that it encompasses.
One rule I heard early on is that I should “Be gluten free but don’t eat gluten free.” Now, what exactly does that mean?! It took me awhile to figure it out and I can tell you that I am eternally grateful to whoever told me that!!!
If you are already changing the way you have to eat, make the leap to be healthier. Learn to live without all the processed foods that have gluten free slapped all over their labels. These foods can actually be worse for you than conventional processed foods. Eating healthier means moving towards a diet that is rich in fresh fruits, vegetables and lean proteins. The closer your food is to its natural state, the better.
