My house is solidly divided between those who love meatloaf and those who detest meatloaf. Mostly, those who fall on the detest side have horrible memories of dried out meatloaf, smothered in ketchup to hide the flavor. To combat this split decision and end the meatloaf dilemma, I thought I would conduct an experiment. I decided to give my theory a test, so instead of making the traditional whole meatloaf, I made meatloaf burgers.
For my son’s birthday, I made a big batch of the meatloaf recipe and formed them into individual burgers, which I served over mashed potatoes and some homemade roasted ketchup on the side. The result were unanimous. They all thought that the burgers were fabulous!
They were a hit, mom tested and kid approved-lots and lots of kids.
No one even suspected that their delicious burgers were created out of my meatloaf recipe.
This burger recipe is perfect for freezing extra burgers, minus the cheese, to have on hand.

- 1 tbsp olive oil
- 4 cups yellow onion diced into small pieces
- 1 cup celery diced into small pieces
- 2 1/2 lbs pork ground
- 2 1/2 lbs ground beef
- 3 eggs beaten
- 1 cup breadcrumbs gluten free
- 1 cup tomato sauce gluten free
- 2 tsp worcestershire sauce gluten free
- 1 1/2 tsp garlic powder
- 1 tsp salt
- parmesan cheese sliced (optional)

- Preheat oven to 350º
- Add olive oil to a large non-stick pan, add the onions and celery to the pan
- Cook for 10 minutes and remove from pan, set aside and allow time so they are cool to the touch
- Combine all the ingredients in a large mixing bowl. With clean hands, mix all the ingredients together until well incorporated
- Form into equal sized patties. If freezing see, wrap individual patties in plastic wrap, store in airtight container, label and store in the freezer
- Bake for patties for 20 minutes at 350º turn patties over and cook for an additional 20 minutes
- If adding cheese, about 10 minutes before the meatloaf patties are done cooking, remove from oven and add the slices of cheese. Return to the oven and cook for the remaining 10 minutes.
- Serve with roasted tomato ketchup (optional)
