Need something quick to serve or take to a holiday dinner? Dread the thought of baking?Make these 15 minute turtles.

You would think that someone who spent most of her life in restaurants and bakeries would always want to prepare something extravagant and complicated. But the truth is, there are times when I don’t want to walk in to my kitchen, let alone, spend hours on my feet, creating desserts.

However, as you know, being gluten free makes things a little more complicated.

And I have to admit, I can be my own worst enemy. I hate paying for something I know that I can make at home, that will be delicious, beautiful and cost me a fraction. So there is my problem. Make it or buy it?

And that’s why these little turtles are so amazing. A handful of ingredients and fifteen minutes is all you need to make candies that will impress everyone.

You can customize them to your liking. Use milk, dark or white chocolate, salt or no salt, pecans or cashews. It is completely up to you.

15 Minute Turtles
This recipe is for one dozen turtles. Simple double or triple to make more. Not all caramels are gluten free. Please make sure to double check the caramels you use.

Instructions
  1. On a silicone mat or wax paper covered baking sheet, arrange pecan halves in clusters of three.
  2. In a microwave safe bowl, microwave milk chocolate chips, 30 seconds at a time, stirring after each time, until completely melted. Stir until smooth.
  3. With a spoon, mound melted chocolate on top of each group of pecan halves, leaving the edges of the pecans exposed.
  4. Remove caramels from wrappers and place in a microwave safe bowl. Add heavy cream.
  5. Microwave 1 minute at a time, stirring in between times until caramels are completely melted. Stir until smooth.
  6. With a spoon, drizzle melted caramel over the chocolate covered pecans until they are covered to your liking.
  7. Let set until candies are firmed up. Place in individual small paper cups.
