Chocolate chip cookies and ice cream – it’s a combination that never fails. Soft and chewy cookies paired with cool, smooth ice cream, these sandwiches will make your kitchen very popular. Ice Cream Sandwiches
You will want to slightly under-bake the cookies so they are soft and chewy.
6 hours or overnight
Prepare cookies as in recipe, roll one tablespoon of dough in to ball and place on silpat or parchment paper covered baking sheets, flattening slightly.
Bake cookies, 8-10 minutes, just until the edges turn golden and the bottoms are lightly golden.
Place pan on cooling rack for five minutes and then remove cookies from pan to cool.
Assemble sandwiches by placing desired amount of ice cream in between two cookies and lightly pressing together. Serve immediately if desired or wrap in plastic wrap and freeze.
Freeze 6 hours or overnight. Once frozen, place wrapped sandwiches in a freezer bag to store until needed.
