Shepherd’s Pie, otherwise known as Cottage Pie is a great weeknight dinner recipe. It originated either in Scotland or England. Shepherd’s pie is the quintessential comfort food and then some. I love to make it for dinner on cold and rainy nights. It warms me all the way through.
This dish is perfect to make if you have leftover mashed potatoes or roast. When I make shepherd’s pie I usually make more than one if I can, simply because it is so freezer friendly. I am all over any kind of meal that can be frozen for those days when I just don’t have the time or energy to make dinner. Frozen shepherd’s pie is also great to have on hand for the friend who may need a helping hand or is under the weather.
The recipe is simple to make and my kids love when it is on our menu plan. Veggies, mashed potatoes and meat all in one dish, what more can you ask for?

- 2 tbsp olive oil
- 1 yellow onion diced
- 1 lb ground beef
- 1 tbsp worcestershire sauce gluten free, flavor of your choice
- 1 tsp garlic minced
- 1 tsp oregano
- 1 tbsp Lawry's seasoning salt
- 1 .88 oz pkg brown gravy mix gluten free
- 1 cup water
- 1 16 oz. pkg mixed vegetables frozen or canned
- 4 cups mashed potatoes
- 1 1/2 cups cheddar cheese shredded (optional)
- 2 tbsp parsley chopped (optional for garnish)

- Preheat oven to 350º
- In a large skillet heat the olive oil and add the onion
- Cook for 5 minutes and add the ground beef
- Cook until no longer pink, stirring occasionally
- Add the spices, gravy packet and water. Stir ingredients together and cook for 5 minutes until the gravy starts to thicken
- Add the mixed vegetables and stir
- Cook for another 5 minutes, stirring the ingredients together until well combined
- In a casserole dish that has been sprayed with cooking spray, add the ground beef mixture and spread evenly
- Add cheese, if desired
- Add the mashed potatoes to the top of the mixture spreading evenly
- Cook in a 350º oven for 50 minutes
- Garnish with chopped fresh parsley, if desired
- Serve immediately
