Everyone always raves about the roasted turkey served on Thanksgiving, but my weakness is all the side dishes. I have been known to eat so much of the sides, that I completely forget about the turkey. I love all the different tastes and textures. For me, that is what Thanksgiving tastes like. I have made this gluten free sausage and herb stuffing for years now. Last year, someone finally noticed that the gluten free people in our family were eating the stuffing. They were very surprised that it was gluten free! I have cooked gluten free for years and they are still surprised. Gluten free cooking is amazing delicious!
This sausage and herb stuffing has all the flavors and smells of Thanksgiving. Even though it is part of the Thanksgiving holiday feast, it can be served as a side dish any time of the year. Since this recipe is to serve eight to twelve people, for a regular day meal, cut the recipe in half.
To cut down your prep and clean up time, the vegetables for the stuffing can be prepped ahead of time, so on Thanksgiving, you just need to assemble your stuffing and pop it in the oven, while you finish your other preparations.
