Guacamole is a simple dish that is so delicious. Made with fresh avocados, tomatoes and cilantro, it is absolutely spectacular. It takes just a few minutes to put together this recipe, which is worth the effort. I always have to chuckle when I make this dish, people are absolutely fascinated with the whole process. When I make it when company is over, I slow down a little and make a show out of it.
I think that guacamole is delicious on just about anything. I love to make up a a huge plate of nachos with bowls of pico de gallo and guacamole on the side, but you can use it for so many different things.
Try switching out this guacamole for mayonnaise on sandwiches. It is perfect for bacon, lettuce and tomato sandwiches. Mix some up with Greek yogurt and use it as a dressing for your salad. Eat it on toast for breakfast, add it to the top of a baked potato, instead of butter or use it to make deviled eggs.
So delicious. No matter how you use it.
Serve this guacamole up with a huge bowl of tortilla chips or our taco salad, grilled fish tacos or our chicken enchilada casserole.
- In a medium bowl add olive oil, 2 tablespoons of red onion and 2 tablespoons of cilantro and muddle.
- Add the avocados and onion; using two spoons crisscross together gently to mash the avocados.
- Add the tomatoes, cilantro, lemon juice and salt - stir together gently to incorporate ingredients.
- We recommend letting the guacamole chill for 1 hour before serving.
- Serve with tortilla chips and enjoy!
* You can use any kind of hot pepper you like or omit entirely, this should be done to your preference.
